Sunday, November 29, Ben and Joanna Popik opened The Truck Stop restaurant, ice cream shop and bar in four shipping containers in San Pedro Town, Ambergris Caye, Belize.  The Truck Stop had a “soft opening” the previous Saturday, but yesterday’s event was the real deal:  live music and a pig roast (often part of celebrations here) along with a corn hole tournament.  I am in awe at their achievement and very impressed with the work ethic of the construction crew, who worked miracles with breathtaking speed and consummate skill.  Often we in the US believe we are at the best at everything, but after ten days on Ambergris Caye, I believe there’s a lot to be learned from these folks about a good work ethic.  Here is a collection of photos from Sunday’s celebration.
